Are you making a big fuss whenever he crashes into the door? Attention is still attention regardless of whether it's good or bad behavior that earns it. African Greys are no dummies. Does it have a bond with your fiancee? He may be trying to get him up if he's been successful doing it in the past this way. I can't reiterate enough how smart these birds are and while their actions may not make sense to you at first, it definitely makes sense to them.
Has your grey been flying long? Previously clipped? They can be really awkward flyers if they are molting out a bad clip or learning to fly after a baby clip. I got on board with the no-clip mentality and mine are all terrific flyers (and more importantly controlled landers!).
Have you tried opening the door before letting your bird out? What does he do if the door is open? Does he go in and harrass your fiancee? Change the situation and see what he does - you'll have a better idea then what's driving his behavior.
